I'm new here, please bare with me.
I have been tracking the activity and actions that this person did and still is doing.
Using remote access, One Drive, Outlook etc...I am afraid to even use my computer.
Is there a way to back up these settings, apps, logs etc... to a removable disk so that it can
be "admissable" in a court case if neccessary?
Appreciate any advise on this and surrounding issues on steps to take.

If you have been tracking, then you will know attackers IP Address which determines attackers ISP which is all you need to do.
ISP recieves report from you and either confirms it or doesnt, if confirmed, your work is done, the ISP will have all the incriminating evidence needed to proceed.
Router logs are also good for personal keepsakes.

Welcome to the Community Forums.
If you suspect that this is indeed happenint to you then you MUST contact/report it to your ISP...they are really the only ones who can and should help you in terms of (i) resolving the issue for you and (ii) providing evidence...as has been alluded to by MrMonster.
