We have 50 min files on one server. I would like to exclude the drive with these files from scanning.
Is possible?

You should be able to with the new folder exclusions feature:

Is it also popssible to prepare the setting that mounted drives are excluded from scanning?
Background: On our customers tenant I've created three different policies
1. For Users
2. For development servers
3. For production servers
Now, I would like to exclude mounted drives from beeing scannend by every user because of the giant volume of network-traffic. Can I genereally exclude them for all clients in the first policy?

You should able to do that as long as they have mapped drive letters. Let me know if you run into any issues. It's not like Webroot scans every file on the drive anyway. It'll only care if you're running executables from those drives.
