I'm about to upgrade my phone I need to know if I can wipe the phone memory of past pictures and conversations?

It should be sufficient if you completely wipe your IPhone with the erase feature in the settings:
(Warnung: You'll unrecoverable delete all your files)
Settings > General > Reset > Erase all Content and Settings.
On older devices the iPhone will overwrite all data. Newer devices use hardware encryption.

iPhone is so smart. If you want to delete data completely from it for freeing up space, I recommand you (LINK REMOVED _ SEE BELOW) to clean data. You can read the article (LINK REMOVED) as an example. It is very easy to operate the software.
