I am using Webroot Secure anywhere. Am also running alongside WSA Malwarebytes. I have discovered that Windows defender is also running. Do I really need Windows Defender running as well? (AV, Firewall, Network).

I my opinion, which I believe is the same as many of the members, the answer is 'No'...in fact WRSA by itself should suffice and given that you are also using MBAM...then that is a very definitive 'No'.
WD should have disabled as soon as it detected a 3rd party AM application installed & running but you should be able to disable WD itself from the Security & Updates option in the Settings menu (assuming that yo are a WIndows 10 user).

In compoent services I see Windows Defender components are running but to make any adblejustments I am unable becasue the settings are greyed out.

Ok, that is sometimes the case. If I recall correctly you need to sign on as Administrator to effect changes to some of the settings, so give that a try and see if that resolves the issue.
