Perhaps I am being a bit paranoid, but I was recently scammed by a 3rd party resulting in my having to have Webroot reinstalled. I just noticed that in the list of hidden icons, there is AnyDesk which is what the scammer had used. If this is a program that normally comes with Windows 11, alright. If not, how on earth do I remove it? I don't fancy anyone having access to my computer without my knowledge.

It doesn’t belong to Windows so just uninstall it: https://anydesk.com/en

 

Also as being a Webroot License user you can have Webroot do a free security check by Submitting a Support ticket as a scan log is uploaded for them to look at and if there are issues they can help you remove any other programs that are of concern.
