apply a policy to a mac

For Agent Commands do you have these Commands as shown below? As for policys I am not sure what you are asking. This sounds like you are using the Business version? If so please look here

Yes - I should have mentioned that I am using the Business version.
 
As it's Unmanaged - I can't set Scan times etc.

Unfortunately the Mac version doesn't support those features. It is something our dev team is working on adding though.
