We have multiple clients that have been long gone but they still appear in the webroot console. They give us false notifications in the 'Currently Infected' report upon logging into the Console.  I'd like to remove those old clients and run a discovery scan to ensure that all our workstation and servers are being protected by webroot. Please help.

You should be able to deactivate old computers that are no longer on your network, which will remove them from activity.  If you need them completely deleted, support can do that for you on the backend.  Typically deactivating is preferable so you have the history.
