What (and how) do I need to backup before (trying) installing Windows 10 from Windows 7?

Welcome to the Community Forums.
 
I would say that in the main you need to back up all data that you cannot afford to lose, i.e., photos, music, emails & documents, etc. The best approach would be to take a full image of your hard drive before the upgrade, that way if you decide you want to go back then you have a quick way of doing so (but Microsoft does off a rollback option for up to 30 days after the upgrade), plus you can also use the image as a data store from which to retrieve files & folders should you need to for any reason.
 
Finally, if you Google your question you will find a plethora of helpful article that provide furthe guidance, etc.

I never really did a backup when I installed windows 10 for the first time, I made the jump head first as most programs will update to the newest versions once you reach the desktop on the new OS.   But if you wanted to do a backup this is how: http://windows.microsoft.com/en-gb/windows/back-up-files#1TC=windows-7
